Mushroom Lentil Curry

Ingredients

1/2 cup Lentils

1/2 cup Mushrooms

String beans

3 cloves of Garlic

1/2 cup Coconut milk

3 tbsp Curry powder

1 tbsp Onion Powder

1/2 tbsp Cayenne Pepper

Pinch of Salt

2 tsp Black Pepper


Directions

  1. Boil lentils and string beans until soft.

  2. In a non stick pan on medium heat add 1 tbsp of oil along with 3 tbsp of curry powder and garlic cloves.

  3. Once you begin to smell the curry aroma, add the mushrooms and lentils and stir until evenly coated.

  4. Add the string beans and seasonings. Stir to combine.

  5. Pour in 1/2 cup coconut milk and brin to a simmer on low heat.

  6. Once thoroughly reduced with a thick gravy, serve the lentil curry with a sprinkle of red pepper flakes over white rice or with flat bread.
