Mini Banana Matcha Pancakes

Ingredients

1 egg

1 tbsp olive oil

1/3 cup almond milk

1/2 cup flour

1 tbsp matcha powder

1 tsp vanilla bean paste

1 tsp cinnamon powder

A pinch of salt

Maple syrup

1 Banana










Directions

  1. Whisk 1 whole egg in a bowl.

  2. Add a pinch of salt and 1 tbsp olive oil and whisk.

  3. Pour in almond milk and cinnamon and whisk to combine.

  4. Add matcha powder, vanilla bean paste and salt and stir to combine.

  5. Sift in 1/2 cup of flour and fold into the wet mixture.

  6. Slice up one banana and coat each slice generously with the mixture.

  7. In a pan on medium heat, place each coated banana slice and cook evenly on both sides.

  8. Serve the mini pancakes with fruit of choice (blueberries used here), coconut flakes and a drizzle of maple syrup and enjoy.


You can also make them into regular sized pancakes and serve with bananas and other fruit on the side!
