Split Pea Soup
Ingredients

2 Cups Split Peas
3 Medium Carrots
1 Can Coconut Milk
3 Cups Vegetable Stock
1/2 Onion
8 Cloves Garlic
1 Tbsp Cumin
1 Tbsp Cardamom
Salt to taste
Pepper to taste
1Tbsp Oil
Directions
In a pot on medium heat, add a tbsp of cooking oil. Add 1/2 an onion, chopped and 8 cloves of garlic, minced to the pot and stir to incorporate the flavors.
Once you begin to smell the aroma of the onion and garlic, add all your seasonings.
Pour in 3 cups of vegetable stock. Chop the carrots and add to the pot and let cook until the carrots are soft.
Add in split peas to the pot, cover and let cook for 10-15 mins on low heat.
Pour in a can of coconut milk.
Transfer the contents of the pot to a blender and blend until smooth. You can use an immersion blender and blend the soup directly in the pot if you have one.
Serve the soup in a bowl and spoon in some coconut milk on top for garnish. The soup pairs very well with grilled cheese. Enjoy!
