Plum Jelly Matcha

Ingredients

4 medium red plums

1 tbsp chia seeds

tbsp maple syrup

2 tbsp matcha powder

1 cup milk

Water


Directions

  • In a pot on medium heat add chopped plums and maple syrup with just a bit of water (just enough to cover the bottom of the pot without submerging the plums). Bring to a gentle boil, stir and lower the heat to reduce the mixture.

  • Once the mixture has reduced to a jelly consistency, remove it from the heat and let cool. Add the chia seeds and stir.

  • To the bottom of a chilled glass add 2-3 tbsp of the plum jelly followed by ice cubes.

  • Pour in a cup of milk

  • Whisk two tbsps of matcha powder with cold water and a tbsp of maple syrup. Pour the matcha into the glass and mix to combine the matcha and the milk.
