Sticky Date Sourdough Pancakes

Ingredients

1 egg

3tbsp melted butter

1/3 cup milk

1/3 cup coconut milk

1/2 cup flour

2 tbsp sourdough starter

A pinch of salt

2 tbsp date caramel

Maple syrup

1 tsp nutmeg

Directions

1. Whisk 1 whole egg in a bowl. Add 2 tbsp of sourdough starter and whisk to combine.

2. Add a pinch of salt, melted butter and whisk.

3. Pour in coconut milk, regular milk and nutmeg and whisk to combine.

4. Add in 2tbsps of date caramel (see how to make it here) and stir to combine.

5. Sift in 1/2 cup of flour and fold into the wet mixture.

6. In a pan on medium heat, spoon in the pancake mixture and cook evenly on both sides.

7. Serve pancakes with a small pad of butter and a drizzle of maple syrup and enjoy.
