Plum Jelly Sourdough Pancakes

Ingredients

1 egg

3tbsp melted butter

1/3 cup milk

1/3 cup coconut milk

1/2 cup flour

2 tbsp sourdough starter

A pinch of salt

Plum jelly

Maple Syrup

Greek Yogurt

Directions

  1. Whisk 1 whole egg in a bowl. Add 2 tbsp of sourdough starter and whisk to combine.

  2. Add a pinch of salt, melted butter and whisk.

  3. Pour in coconut milk and regular milk and whisk to combine.

  4. Sift in 1/2 cup of flour and fold into the wet mixture.

  5. Add in 1/3 cup of plum jelly (see how to make it here) and stir to combine.

  6. In a pan on medium heat, spoon in the pancake mixture and cook evenly on both sides.

  7. Serve pancakes with a dollop of greek yogurt and a few spoonfuls of plum jelly. Drizzle with maple syrup and enjoy.
